Turkey Pot Pies

 

Traditional roasted turkey can be turned into mouth watering comfort foods.
Here is a recipe that will surely bring life back to your turkey…
 
Turkey Pot Pies with Cornmeal Crust
Serves 6
 
Ingredients
1 pkg. refrigerated pie crust
2 cups frozen mixed vegetables, thawed
1/3 cup margarine
1/3 cup chopped onion
1/3 cup flour
¾ tsp salt
¾ tsp pepper
1 ½ cup chicken broth
2/3 cup milk
3 cups shredded turkey meat
 
Directions:
Unfold pie crust and follow directions for making a two-crust pie.
Heat oven to 425°F.
In a medium sauce pan, melt margarine. Add onion and cook for two minute until tender.
Add flour, salt and pepper. Stir well until blended. Gradually add broth and milk. Stir constantly until bubbly and thickened. Stir in turkey and vegetables, remove from heat.
Spoon filling into pie crust. Place second crust over filling and crimp edges to close.
Cut vent holes in top crust to let steam evaporate.
Bake pie for 30 to 40 minutes or until crust is golden brown.
